Bring a large pot of salted water to a boil.
Cook 8 ounces of spaghetti in the boiling water until al dente. Drain and reserve 1 cup of pasta water.
In a skillet, cook 4 ounces of diced pancetta until crispy. Remove from skillet and set aside.
In the same skillet, add 2 cloves of minced garlic and cook until fragrant.
Return the cooked pancetta to the skillet, then add the cooked spaghetti and toss to combine.
In a bowl, whisk together 2 beaten eggs and 1/2 cup of grated Parmesan cheese.
Pour the egg mixture over the spaghetti and quickly toss to coat. If needed, add reserved pasta water to create a creamy sauce.
Season with salt and pepper to taste.
Serve immediately with additional grated Parmesan cheese and chopped parsley on top.
